"The quality of food can be ensured by controlling the entire production chain, granting the compliance with best practices and law regulations. Beyond objective measurements on food characteristics to evaluate its quality, subjective characteristics mainly derived from sensory analysis (i.e., judging food through five senses) are crucial features. Furthermore, in the era of Big Data for Agri-Food 4.0, food certification can be enriched with fine-grained data collected throughout the production and supply chain, as well as the communication to the final users (the consumers) must be carefully managed. This seminar will provide an overview of ongoing research in this field. In particular, we will start from methods and tools used to supervise sensory analysis panels, specifically designed to control the subjective nature of tasters (more or less experts on this task) to setup a methodological approach for the generation of food certificates. Moreover, we will discuss how this information can be properly integrated with Big Data collected in the food production and supply chain, requiring effective techniques for addressing data volume, velocity and variety. Finally, we will provide some interesting considerations about the use of modern technologies for managing the information sharing with consumers, investigating the adoption of the blockchain and highlighting challenges about its sustainable application."
