Towards a healthy, tasty, affordable, and sustainable diet
As part of initiatives aimed at promoting the health of individuals, the community, and the environment, the first edition of the S.A.P.O.R.E. introductory theoretical and practical course was held in March 2025. Structured into four evening sessions, the course was designed to help students, particularly those living away from home for the first time, manage their daily meals by providing the basic knowledge needed to plan and prepare quick and nutritionally balanced meals.
The course was developed through a collaboration between the Università degli Studi di Brescia (the Sustainable Development Commission and the Research Group in Food Science and Applied Dietary Techniques), the Departmental Food Hygiene and Nutrition Unit of ATS Brescia, and the Andrea Mantegna State Higher Education Institute of Brescia. Organized by the Sustainable Development Unit of UniBs, the initiative aimed to encourage the student community to adopt healthier eating habits based on simple, minimally processed foods that are also tasty, affordable, and sustainable.
An open badge was associated with the course and was symbolically awarded to participants during a ceremony held at the Rectorate in the presence of the Director General.
All participants also received the course handbook containing the theoretical materials, the related bibliographic references, and the recipes prepared during the four evening sessions.
